I) Spicy Mutton Curry

1/2 kg mutton, cleaned, cubed
1 tsp turmeric powder
1 tbsp ginger-garlic paste
1 cup oil
8 cloves
8 peppercorns
1 tsp poppy seeds (khus khus)
1 tsp coriander seeds
1 tsp aniseeds (saunf)
6 red chilies
2 large onions, chopped
1/2 coconut, grated
3 tomatoes, chopped
4 large potatoes, peeled & halved
1 cup coriander leaves
Salt to taste

Method:
1. Marinate the meat pieces in salt, turmeric and ginger-garlic paste for 1 hour.
2. Heat 2 tbsp of oil in a pan. Add cloves, peppercorns, poppy seeds, coriander seeds, aniseeds and red chilies. Fry the spices until a nice aroma appears. To this, add onions and fry until golden brown.
3. Next, add grated coconut, tomatoes and fry for a while. Remove from heat and let them cool. When cooled, grind to a paste and keep aside.
4. In a pressure cooker, heat the remaining oil. Add meat and potatoes and stir fry till brown. Add the ground masala pasteto the mutton pieces along with salt. If needed, add water.
5. Cook under pressure till meat is soft. Remove from the cooker.
6. Garnish with coriander leaves and serve with soft chapatis.


II) Spicy mutton fry ingredients:

1. Mutton - 1 kg
2. Onions - 2 (finely chopped)
3. Tomato - 1 (finely chopped)
4. Ginger garlic paste - 2 tsp
5. Turmeric powder - ½ tsp
6. Chilli powder - 1 tsp
7. Coriander powder - 2 tsp
8. Pepper powder - 2 tsp
9. Mustard seeds - 1 tsp
10. Curry leaves - 10
11. Coriander leaves - few
12. Oil - 4 tbsp
13. Salt - to taste

Spicy mutton fry preparation:

Clean and wash the mutton pieces. Then pressure cooks the mutton pieces with chilli powder, salt and turmeric powder up to 7 whistles.Now take a kadai and heat with oil.

Add mustard seeds and curry leaves. Then add chopped onions.

Fry till the onion colour changes to golden brown colour.

Then add chopped tomatoes and ginger garlic paste and pepper powder.

Fry for few mins.Then add the pressure cooked mutton pieces.

Combine well.Now close with a lid and cook till the mutton pieces would be in dry form.

In between stir well.Finally garnish with coriander leaves.

Spicy mutton fry is ready. Serve hot with biriyani, fried rice, white rice etc...
